Mark Bittman
Mark Bittman, a leading voice in global food culture and policy for more than three decades, is the author of the best-selling book How to Cook Everything. Bittman spent three decades at the New York Times, where he created “The Minimalist.” He was the Sunday Magazine’s lead food writer, and became the country’s first weekly opinion writer at a major publication to concentrate on food. Bittman, currently the editor-in-chief of The Bittman Project, is on the faculty of Columbia’s Mailman School of Public Health, and the founder of Community Kitchen, which he describes as “the most important project I’ve ever tackled.”

Paige and Derrick Jackson are the founders of Grass Grazed, a pasture-based regenerative farm that raises pork, chicken, and cattle with a focus on ethical practices and full transparency from farm to table. Their mission is to offer protein with the promise of integrity, reconnect consumers with the origins of their food, and ensure every step of their process is rooted in honesty and responsibility. Derrick left a 14-year military career to join Paige in pursuing their shared dream of ethical, transparent agriculture. They live in North Carolina, “hog country,” along with their 5 children.
